Inside the bee's honey stomach, enzymes like invertase break down complex sugars into simpler ones. When the bees return to the hive, they put the nectar into wax cells. House bees fan the cells with their wings to create airflow.This fanning reduces the water content to less than 18%. The low moisture and high sugar levels stop bacteria and yeast from growing. This is why honey does not spoil over time.
